This syrupy, enticing carbonically macerated coffee is back from the farmers who make up Gold Mountain Coffee Growers.
Gold Mountain is a group of more than 70 growers in Nicaragua—part of a movement toward ethical supply chains that lift farmers out of poverty. Gold Mountain works hand in hand with producers, sharing resources, guidance, and quality control. From consulting agronomists and ripeness experts to processing facilities, Gold Mountain’s scientific resources add up to a real-world toolkit for farmers to promote ideal harvests and high cupping scores—with the end goal of selling higher quality coffee at prices that combat poverty.
Nicaragua Elixir comes from a variety of farmers including Maximino Palacios and Marlene Hernandez, Carlos Garcia, Juan Carlos Salgado & Aracely Montenegro, Yesenia Salgado Lanzas, and Gold Mountain’s own experimental farm—Finca Idealista (Benjamin Weiner). As always, traceability is key for our Emerald Micro Lots, as well as Gold Mountain.
Processing takes place at Finca Idealista, where experimentation with carbonic maceration has brought about delicious results. Elixir this year is 100% carbonically macerated, double fermented and dried with the cherry still intact. The process yields a syrupy profile of wildberry jam and honey notes.
Beyond operating Finca Idealista’s farm and mill and providing expertise to member farmers, Gold Mountain has many contributions under its belt. To offset climate disruption, the group purchased a parcel of rainforest to protect endangered plants and animals. Gold Mountain has also provided numerous direct social benefits to its community, including extending farmers’ access to credit, supplying running water to schools, and installing water catchment and filtration systems.
