Through our relationship with Onyx Coffee, which has deep and long lasting ties to the people and coffees of Guatemala, we are excited to bring you this coffee from the Entre Rios association in the San Marcos region of Western Guatemala.
Bordering Mexico to the West and Huehuetenango to the North, San Marcos is a remote region. It’s not only the warmest growing region in Guatemala, it’s also one of the rainiest—seasonal rains come early and often, creating earlier blossoms. Along with these climate conditions, rich volcanic soils give San Marcos coffees a distinct cup profile.
Entre Rios was formed in 2010 by 18 farmers as an offshoot of a larger association where management issues caused productivity to suffer. The members of Entre Rios assembled with a mission to support farmers through transparent and fair management with a focus on quality.
Today, Entre Rios is made up of 33 smallholder farmers, who each have an average farm size of only 1.5 hectares. Farms are planted primarily with Bourbon, as well as more disease- and drought-resistant cultivars.
This coffee is certified organic and was processed using a 24-36 hour fermentation and then dried on patios. It is made up of Bourbon, Sarchimor, Anacafe 14, and Catimor varieties grown at 1,400 meters above sea level. In the cup, we find notes of apple, brown sugar, golden raisin, hazelnut, and toffee.
