Honduras FTO Armadillo Honey

 

Honoring and supporting our diverse ecosystems is key to sustainability, and we’re delighted to offer this microlot from the COCAFCAL Co-op in Honduras, whose coffees we offer year-round.

 

Cooperativa Cafetalera Capucas Limitada (COCAFCAL) or Capucas as they are better known, is situated on and around the Celaque mountain, the highest peak in Honduras, where armadillos roam. Celaque means “box of water” in the local Lenca language, and the mountain is the source for many rivers and streams. This coffee is produced and processed by families within the co-operative that have diversified incomes and, along with their coffee farms, also keep bees.

 

Our sourcing partners D.R. Wakefield worked with Capucas and asked if they could produce a couple of microlots to support beekeeping in particular, and boost overall honey production within the cooperative. Beekeeping not only contributes positively to the farms and surrounding environment, honey production diversifies income streams for coffee growers and provides greater economic stability. Through this incentive, existing apiarists can benefit from new and better hives, and those new to beekeeping gain access to equipment and training.

 

This is also an anaerobically fermented coffee, using controlled time, temperature, and environment for the coffee’s fermentation to allow specific flavor development. It is fermented in a container deprived of oxygen and held at no higher than 20°C, then dried in solar dryers for between 25–32 days. In the cup, we’ve found this bee-friendly coffee to ring with tropical and stonefruit notes—we wouldn’t be surprised if it creates quite the buzz.
