Origin Story

We’re excited to present this fruity, naturally anaerobic fermented coffee from the El Vergel Estate in Tolima, Colombia. These spectacular Red & Yellow Bourbon microlots from El Vergel Estate are grown by Elias and Shady Bayter. Former avocado farmers who transitioned to coffee cultivation in 2006, the Bayter family has achieved significant success with anaerobic fermentation. Their dedication to continuous research and process experimentation has consistently enhanced the quality of their coffee. Alongside their partner Martha Montenegro, they have elevated the fruit-forward profile of Colombian coffees from this region. This caffeine-less Colombia Guava Banana coffee is tropically bright with punchy berry and plum notes, citric acidity, and a touch of cocoa sweetness.

Why This Decaf Is So Special

This coffee is part of our Small Batch Series, which showcases limited, highly traceable decaffeinated offerings with an emphasis on quality and sustainability. These unique coffees are hyper-seasonal and carefully handpicked for their great flavors.

Decaffeinated to 99.9% caffeine free, the coffee’s inherent and distinct flavors are preserved through the Swiss Water® Process. Our 100% chemical free decaffeination method gently removes caffeine through diffusion, using only water and the soluble solids that naturally occur in green coffee, so no flavors are imparted onto the bean.

Saza Coffee Partnership

With a coffee this special, we wanted to ensure that the roasting would highlight its amazing flavors. A partnership between Swiss Water and Saza Coffee was only natural due to our mutual commitments to and reputations for quality. Saza Coffee started as a small home-roasted coffee shop in Hitachinaka City, Ibaraki Prefecture. Today, they strive to be the best in specialty coffee. They personally visit coffee-growing regions (including their own farm that they own), hand-selecting beans, and engaging in direct trade to purchase green coffee. While respecting the rich history and traditions of coffee, Saza continues to innovate, constantly researching and working towards creating a truly “revolutionary coffee experience.”

The collaboration between Swiss Water and Saza Coffee was an exciting opportunity. Saza Coffee roasters skillfully roasted the decaf Colombia Guava Banana, utilizing their expertise to bring out the best of this coffee’s unique flavor profile. They used a 35 kg fully hot air roasting machine (LORING) from the United States, and their team really enjoyed the process.
