Swiss Water Process Chiriquí Panamá Small Batch Decaf


This anaerobic natural process coffee from Chiriquí, Panama is decaffeinated using our 100% chemical-free process, preserving the subtle and distinct flavors of the coffee, while leaving it 99.9% caffeine-free. Swiss Water uses a gentle process that removes coffee using only time, temperature, water, and a sustainable Green Coffee Extract (GCE) that allows us to decaffeinate without imparting any added chemicals or their residual tastes.

This offering is part of our Small Batch Series which focuses on highly traceable, uniquely delicious coffees with an emphasis on sustainability and quality (and which complements our many fantastic year-round, perennial decaf green offerings). Swiss Water sourced this particular offering from Creativa Coffee District (CCD) in Chiriquí. Nominally a coffee mill, but also a cultural project, CCD’s wet mill and drying patios are the home to artistic collaborations and residencies—tying together the culture of the Boquete region with the magic of its world-renowned coffees. Creativa Coffee District is also a leader in terms of farming innovation, as in their Starts With Soil (SWS) initiative which works to analyze soils and provide guidance over crop stewardship and biodiversification, increasing productivity of the farms who work with CCD as well as providing environmental benefit.

This Small Batch offering is a curated selection of coffees from farms in Hornito, Reinaciemiento, and Boquete processed at the CCD mill in Boquete. The anaerobic natural process lends the cup a developed lactic acidity and creamy body with complex, intricate fruit and spice notes like cinnamon, black tea, mango, and plum.
